This shrimp recipe embodies what's great about grilling: Just a few minutes over the coals transforms a handful of simple ingredients into a tasty dinner that's fuss-free and sure to please everyone.

Ingredients

Makes 4 servings

1/4 cup olive oil
2 teaspoons dried oregano, crumbled
1 small red onion
24 peeled and deveined large shrimp (about 1 pound)

4 long metal skewers

Accompaniment:

    Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); seeGrilling Procedure.

    Step 2

    Stir together oil, oregano, and 3/4 teaspoon each of salt and pepper in a bowl.

    Step 3

    Cut onion lengthwise into 3/4-inch wedges and separate layers. Toss shrimp and onion with oil mixture, then thread 6 shrimp onto each skewer, alternating with single layers of onion.

    Step 4

    Grill shrimp, covered only if using a gas grill, turning once, until just cooked through, 3 to 4 minutes total.

  • I made this on the grill pan and didn't skewer because of that. I also reduced the salt and added a squirt of lemon at the end. Otherwise, made as is.

  • What a simple, lovely recipe! My only change was a squeeze of lemon right before taking the shrimp off the grill. I will definitely make this dish again.

  • Love this recipe. I don't skewer (or use the red onions). Just throw the shrimp on the grill and serve with lemons. Great as an appetizer with cocktails. Fun ... and delicious!

  • This recipe was very easy to make. I had to cut the salt because the first batch I made was too salty so I just seasoned to taste

  • This was so easy and absolutely delicious - and I'm not wild about shrimp. Will make often this summer, but mind the salt (was a little too salty for me this time and I'm not usually shy about sodium).

  • This was OK. Nothing special. The orzo is better! BUT still very quick and easy to put together with ingredients always in the pantry (apart from the prawns).

  • Super easy and very tasty. I used my mortar and pestle to crush the oregano even finer. Let the shrimp marinate for 1 hour. Love it when a recipe is simple, yet amazingly flavorful. I did make with the orzo, too. Thought the recipes worked well together, as this is a mediterranean dish.

  • amazing, tasty and so easy. Definately serve with the orzo pasta salad suggested. Its great...even made on my griddle pan for lack of a real grill. I hate apartment living....
