These snaggable, snackable wedges have more in common with a bowl of party mix than any perfunctory salad.
Ingredients
Step 1
Toast coriander seeds and fennel seeds in a dry small skillet over medium heat, shaking often, until fragrant, about 2 minutes. Let cool. Using the side of a chef’s knife, lightly crush spices on a cutting board. Transfer to a small bowl and mix in garlic, lemon zest, and cream. Cover and chill 1 hour.
Step 2
Strain infused cream through a fine-mesh sieve into a medium bowl; add buttermilk and whisk until soft peaks form. Season with salt, then mix in grated chile.
Step 3
Whisk grapefruit juice, lemon juice, vinegar, and ginger in a large bowl and season with salt. Add lettuce wedges to bowl, season with salt, and toss to coat. Arrange lettuce wedges on a platter.
Step 4

Followed recipe as written. Served this at a Christmas cocktail party and it was great. A nice and refreshing accompaniment to serve with richer appetizers. The dressing is unique and complex. Thinking this could also be served as salad course.

A question, not a review . . . Instead of infusing and straining the cream (with coriander and fennel seeds), couldn't one grind the spices and mix into the dressing? If one wanted to do this instead, how much coriander and fennel would one use. I am sure the full amount is way too much.

Delicious! This apetizer provides a very nice contrast with other apetizers, which are often very salty/sweet/fatty, while this recipe is light, fresh and crunchy. The garlic infused cream is delicious and the citrus dressing pairs very nicely. I will definitely make this again.

Pedalninja: did you read the recipe or just look at the picture? Did you make the recipe before rating it? I'm pretty sure I can guess your answers. No, it's not lettuce leaves dipped in ranch dressing. It has 17 unusual ingredients combined in a way that I bet you'd never think of. Lettuce wedges tossed in an interesting vinaigrette, then drizzled with a toasted spice infused cream and topped with nuts and seeds. Delicious! Thank you, Andy Baraghani.

I don't understand people who comment about something not being a "recipe." It's obviously a recipe but maybe just doesn't meet the "sophistication" or "advanced" experience of some so-called "chefs." Frankly, I am always looking for new ideas for party finger food, and this met the bill exactly. Not something someone would ever think of.

I have to be honest here, This is a pretty embarassing "recipe" for epicurious, so basically you get lettuce leaves and dip it in a ranch dressing?? So whats next, baby carrots and blue cheese dip? Lays Chips and dip? I'm stunned this was actually published, it would have made more sense to post on April 1st, april fools day...
