Mexican-Style Spicy Sweet Potato and Chicken Bowl

A one-pot evening meal with minimum fuss and maximum taste.

Ingredients

Serves 2

2 sweet potatoes, peeled and chopped into chunks
Coconut oil, for greasing and frying
1 garlic clove, crushed
1 red onion, finely diced
200g skinless chicken breast, cut into chunks
1 teaspoons paprika, plus extra for sprinkling
200g canned chopped tomatoes
1 ripe avocado, pit removed and flesh cut into chunks
2 tablespoons sour cream
1 small handful of fresh cilantro
Sea salt and freshly ground black pepper
  1. Step 1

    Preheat the oven to 200°C/400°F/Gas Mark 6.

    Step 2

    Massage the sweet potato chunks with a little coconut oil, season well and then place onto a foil-lined tray. Bake in the oven for about 35 minutes.

    Step 3

    Meanwhile, heat a small amount of coconut oil in a frying pan, add the garlic and red onion and fry gently until slightly softened. Add the chicken breast chunks, lightly season with paprika and a pinch of salt and pepper and brown the chicken for a few minutes.

    Step 4

    Add the chopped tomatoes, then leave to simmer for 20 minutes until thickened.

    Step 5

    Once the sweet potato is cooked, add to the pan and stir through.

    Step 6

    Plate up, add the avocado, sour cream and sprinkle with fresh cilantro and paprika and serve.

  • I followed this recipe 90% of the way...and it will definitely enter my weeknight rotation. Starting with the few changes I made: -subbed chopped tomatoes with a jar of salsa (it was all I had laying around) -instead of sour cream, made a sauce with greek yogurt, cilantro, salt and lime It's about 5-10 minutes of dicing/chopping, but otherwise it just sits in the oven and on the stove. It was an easy, tasty, healthy weeknight dinner.

  • So, admittedly I tweaked this: smoked paprika, Mexican oregano, cumin, garlic powder were rubbed over the sweet potatoes with avocado oil before being roasted. Same mixture sprinkled plus chili powder over cubed chicken breasts before cooking. Added a whole white onion & 3 cloves of garlic after the chicken was partially cooked. 15oz can of diced tomatoes. I served it as make your own with some rice and the roasted potatoes separate. With these changes, it will go into dinner rotations here. Oh and a bit of shredded Colby Jack cheese too.

  • It had lots of different flavours, but it was a weird mix of ingredients. It was sort of like a stew but not really. It almost seemed like it needed a base, like rice.

  • This recipe is tasty but underwhelming on its own. With some charred vegetables like a bell pepper, additional red onion, etc. and some tortillas this recipe can make for some very good fajitas. I also top it off with a squeeze of fresh lime and its delicious

  • This was surprisingly good! I did add a few chipotles in adobo sauce, just chopped up when adding the tomatoes (and I upped to 400g of tomatoes). It was really fast and delicious.

  • Good and simple recipe. I added a bit of chilli powder to make it spicer but I'm happy with how easy it is to make. Perfect meal after a workout.

  • I enjoyed this a lot, but found it a little sweeter than I expected. Maybe I didn't add enough paprika to cut the sweetness from the sweet potatoes.

  • 爱this recipe!! Definitely will be doing this again, and putting my own spin on things. It's not spicy, and the chicken was a little bland, but when you eat all the flavors together, it was great. Also, I had finely chopped jalapinos on the side, ready to add when plating as an option. I love that the recipe is straight forward and simple, since - while I liked it the way that it is - it gives me ideas for other ways to make this in the future. So good, so healthy!

  • YUM!!!!! My husband couldn't stop saying 'This is awesome!' The paprika powder gave it a nice hint of heat. What I would do differently next time I'll make it is brown the chicken first, take it out, fry the garlic and onion and then put the chicken back in :)

  • This recipe is titled Spicy" not sure how one clove of garlic, half an onion and a bit of paprika can manage that.
