Peach Dutch Baby With Cherry Compote

This puffy, soufflé-like pancake is just as good for dessert as it is for breakfast. Don't worry when it deflates as soon as it's removed from the oven; that's exactly what's supposed to happen, forming a well for the cherry compote. Serve it immediately, right from the skillet.

Ingredients

6 to 8 servings

Compote:

¼ cup honey

2 cups fresh (or frozen, thawed) cherries (about 1 pound), stemmed, pitted, halved

Pancake:

4 tablespoons (½ stick) unsalted butter, divided
4 large eggs
¾ cup all-purpose flour
¾ cup whole milk
3 tablespoons sugar, divided
1 teaspoon vanilla extract
¼ teaspoon kosher salt
2 peaches, halved, pitted, cut into ¼"-thick wedges
Powdered sugar (for dusting)
  1. For compote:

    Step 1

    Bring honey, lemon peel, lemon juice, and ½ cup water to a boil in a small heavy saucepan. Add cherries and simmer briskly, stirring occasionally, until sauce is syrupy, about 15 minutes. Transfer cherry compote to a medium bowl and chill.

  2. For pancake:

    Step 2

    预热烤箱至425°F. Melt 2 tablespoons butter in a small saucepan; scrape into a blender. Add eggs, flour, milk, 1 tablespoon sugar, vanilla extract, and salt. Blend batter until smooth; set aside in blender.

    Step 3

    Heat a 12" cast-iron skillet over medium heat. Add remaining 2 tablespoons butter and remaining 2 tablespoons sugar and cook, stirring constantly, until sugar starts to caramelize, about 2 minutes. Add peaches to skillet; increase heat to medium-high and cook, stirring frequently, until softened, about 2 minutes. Briefly reblend reserved pancake batter. Pour evenly over peaches and transfer to oven.

    Step 4

    Bake pancake until puffed and golden brown all over, 17-20 minutes (it will deflate as soon as it's removed from the oven). Dust pancake with powdered sugar and serve immediately, passing cherry compote alongside.

    Compote can be made 1 day ahead. Cover and chill. Remove lemon peel just before serving.

  • Really delicious. The cherry compote needed more than 5 minutes to thicken (maybe 10 minutes). And same with the sugar caramelization (about 4-5 minutes)

  • This has become my go to weekend brunch recipe. So easy to do, not too sweet, always delicious. I don't bother with the the compote, and I've substituted blueberries and apples for the peaches with great results. So delicious and simple.

  • I love that someone added Kirsch. What a great touch that will make this less bland. I like bland though. I like to taste the eggs. I could just eat these without anything added. : ) Otherwise, I think this is a great recipe in its own right. (Four forks)!

  • Made it for dinner for the family. Very good. Probably should have cooked the peaches a bit longer before adding the batter. Didn't make the cherries so added a bit of nutmeg and cinnamon to the peaches.

  • Just made this this morning. Relatively easy to assemble and cook. Made as per recipe and it looked great. The pancake was rather dense. Unfortunately it tasted rather bland. Should have made a peach/cherry cobbler.

  • Made this for supper last Sunday and will be making it again today. Followed the recipe exactly, but added a splash of Kirsch to the cherries as recommended by another reviewer. Didn't have a 10" iron skillet, so I used my 5 quart Le Creuset French oven. Excellent!

  • Pancake was really good, I will even try this in the winter with frozen peach slices. I usually stick to the recipe EXACTLY, but we had fresh, smashed raspberries on hand so we mixed those with real maple syrup and used instead of the cranberry compote. I think the tartness of the berries was a nice contrast. All in all, a very seasonal, yummy dinner for us.

  • Came our exactly as pictured. Very good taste, eggy & fluffy. Peaches were nicely carmelized. The compote needed just a little something, though...maybe splash of Kirsch.
