For a little less heat, omit the chiles or mustard seeds.

Ingredients

Makes 6 Servings

2 tablespoons ghee (clarified butter) or vegetable oil
1 bunch scallions, coarsely chopped
2 dried chiles de árbol or 1/2 teaspoon crushed red pepper flakes
2 garlic cloves, finely chopped
2 teaspoons yellow mustard seeds
4 bunches flat-leaf spinach, stemmed, very coarsely chopped
Kosher salt, freshly ground pepper
  1. Heat ghee in a large skillet over medium-high heat. Add scallions, chiles, garlic, and mustard seeds. Cook, stirring often, until garlic begins to brown and mustard seeds pop, about 1 minute. Add spinach to skillet by the handful, allowing it to wilt between additions. Cook, tossing often, until spinach is tender, 5-8 minutes. Season with salt and pepper.

  • Like Chardgirl I served this with Chicken Tikka Masala and Basmati Rice. I did cut the amount of mustard seeds and red pepper as a matter of taste and subbed a combination of spinach and kale. It was good.

  • So fresh, healthy, tasty and delicious. And I was surprised the 1/2 teaspoon of chili gave it that much kick!

  • I cook a lot from my garden and I really get irritated when recipes contain things like "4 bunches" of spinach.

  • Delish as is! The second time, I added some kale to the spinach, added leftover cubed, cooked sweet potatoes and cracked a few eggs on top toward the end of cooking for a super lunch.

  • Very nice, Next time I would cut the oil in half, but otherwise it works nicely. the chiles de arbol are very nice, but I would worry about he crushed pepper flakes being a bit to hot.

  • Wow...loved this side dish! It was so easy and quick to cook. I served it to a friend and she asked for the recipe. It is spicy so watch out.
