Ingredients
4 servings
Blend 2 pitted dates, 1/2 cup vegetable oil, 1 teaspoon finely grated lime zest, and 1/4 cup lime juice in a blender until smooth; season with salt and pepper. Heat 1/4 cup vegetable oil in a medium saucepan over medium-high heat and cook 4 thinly sliced large shallots, stirring often, until golden brown and crisp, 5–7 minutes; drain on paper towels and season with salt. Toss 1 trimmed bunch flat-leaf spinach and 3/4 cup chopped dates with dressing. Top with shallots.

Back to TopGood salad, but I made some adjustments for my taste. Instead of frying shallots, I thinly sliced red onion and used that in the salad without frying. I also added roughly chopped hazelnuts.

I liked the combination of flavors, but the proportions were off, for my taste. Too much dressing (although lime+date=wonderful) to the spinach, too many dates made it too sweet overall. Next time I'll use way more spinach and about 1/2 c. dates. I would have liked some crunch, too, so I'm trying to think of what nut flavor would work best--probably toasted almond pieces.

To the reviewer whose shallots did not come out crispy: It may have been because your pan was not hot enough. If the oil had really been hot, the shallots shoud have crisped right up! Hope that helps for next time :-)

Thought the recipe was delicious, but my shallots didn't come out crunchy, they just came out soft. Anyone know what I might have done wrong?

Idk. Loved the fried shallots over spinach, but something was just missing from this recipe. I added plenty of salt, but the dressing still felt bland and the salad just wasn't "interesting" enough.
