Strawberry and Watercress Salad

We paired peppery watercress with bright rhubarb and sweet berries in this go-to spring salad.

Ingredients

4 servings

1/2 medium rhubarb stalk, very thinly sliced on a diagonal
6 oz. strawberries, hulled, halved, sliced if large
2 Tbsp. fresh lemon juice
2 tsp. honey
1 bunch watercress, tough stems removed
1/2 cup basil leaves
1/2 cup cilantro leaves with tender stems
2 scallions, thinly sliced on a diagonal
Kosher salt
Crushed red pepper flakes
2 Tbsp. extra-virgin olive oil
Poppy seeds (for serving)
  1. Step 1

    Toss rhubarb, strawberries, lemon juice, and honey in a medium bowl to combine.

    Step 2

    Arrange watercress, basil, and cilantro on a platter, then scatter scallions over. Season with salt and sprinkle with red pepper flakes. Spoon berry mixture and juices over; drizzle with oil and sprinkle with poppy seeds.

  • I made it as written, only adding romaine lettuce to the watercress. It was delicious for a hot and muggy night in the greater Washington DC area. It’s a keeper!

  • Lovely salad. I bought fresh watercress and strawberries today at the market. I added soybean sprouts, sliced avocado and sunflower seeds.

  • Couldn't find watercress or poppy seeds, so substituted arugula and sesame seeds. This was a brunch hit—great balance of spring flavors!

  • This was a perfect part of a perfect spring Mother’s Day dinner. Having made the first bits up in step 1 well in advance of dressing the salad with it, I think it really helped to meld the flavours. I also went with mint and Aleppo pepper instead of basil and red pepper flakes. Used everything else in the recipe and then the goats cheese was wanting to be included, so in went the goats cheese, then the toasted pecans said, “What, are we not good enough for your salad?” So in went the pecans. Having seen that the olive oil took a pass and said they’d wait for the next salad, and all was happily delicious. The end.
