Turkey Reubens

Ingredients

Makes 2 sandwiches

1/3 cup mayonnaise
1 tablespoon ketchup
1 tablespoon sweet pickle relish
2 teaspoons cider vinegar
4 slices rye bread
6 ounces sliced cooked turkey
3/4 cup drained sauerkraut
1/4 pound sliced Swiss cheese (4 or 8 slices)
3 tablespoon unsalted butter
  1. Step 1

    Whisk together mayonnaise, ketchup, relish, vinegar, and 1/8 teaspoon each of salt and pepper. Spread on bread and make sandwiches with turkey, sauerkraut, and cheese.

    Step 2

    Melt butter in a 12-inch nonstick skillet over medium heat, then cook sandwiches, turning once, until bread is golden and cheese is melted, about 6 minutes total.

  • I am going to be the detractor here, and say that I really didn't like the taste of the sauce. The whole thing didn't really taste like a reuben to me--the mayo and ketchup were too strong and I felt like I should be putting the sauce on a hotdog or burger, not on turkey deli meat.

  • A fabulous sandwich that is very filling. The dressing is the best part of this recipe. I found the preparation instructions were more helpful from a different Epicurious recipe - Reuben Sandwich by Arthur Schwartz. I followed those directions using these ingredients and I will DEFINITELY make this again. Yum.

  • Hubby stole my sandwich and I had to make another... the smell got to him. This is a great way to 'hide' turkey if you are burnt out. The sauce was yummy. Any type of a Reuben... how can you go wrong?!
