Add Brooklyn Delhi’s Curry Ketchup (and Mustard!) to Your Condiment Arsenal

Spiced, sweet, and tangy, these twists on the classics pack a serious punch.

Scanning the condiments shelf inside someone’s refrigerator door is a bit like reading their diary. It’s an intimate portrait of likes and dislikes, proclivities and pleasures, lined up in an easy-to-reach location for ever flavor need. My collection reveals a craving forheat, an affinity forsweetness, and a slight disregard for expiration dates. It also shows off just how much I like a twist. Countless labels on my condiments shelf boast a little something extra, a tweak to some original recipe. Of all the sauces and spreads in my fridge, the Brooklyn Delhi bottles check the most boxes; in particular, the curry ketchup and curry mustard are reworked classics that have cemented their place in my kitchen.

Brooklyn Delhiis the brainchild of Chitra Agrawal, a chef andcookbookauthor whose work focuses onmanbetx . Agrawal lovesachaars, aromatic and pickle-y condiments that she’d stock up on during every family visit to South India. She couldn’t find any versions around her home in Brooklyn that lived up to the brightness of her souvenirs. After making a few batches herself (and selling out every time she brought them to events and cooking classes), she and her husband, Ben, started Brooklyn Delhi, a purveyor of premium Indian condiments and simmer sauces. Home cooks like me have been the better for it ever since.

While achaars were the first Brooklyn Delhi products to hit shelves—like the cult favoritetomato achaarand bright and savorygarlic achaar—the curry ketchup and curry mustard followed soon after that. According to Agrawal, the inspiration came from an iconic comfort food pairing. “At home we would mix the tomato achaar with ketchup and then dip grilled cheese in it,” she says. “I grew up dipping grilled cheese into ketchup so this was my grown-up version.” The tangy spiced ketchup was so good (“We ate grilled cheese once a week and sometimes more as an excuse to have it,” Agrawal admits) that it kicked off Brooklyn Delhi’s second product line. A mustard to match was the natural next step.

What do the Brooklyn Delhi curry ketchup and mustard taste like? The classic condiments you know and love dancing under a disco ball, lit up from all angles by sweet and savory flavors. “They are a perfect reflection of Brooklyn Delhi in that way,” says Agrawal. “They are American deli condiments infused with Indian flavors.” The ketchup is brick red, slightly darker than Heinz, with a touch of lasting heat thanks to chili powder. Sweet tamarind, roasted garlic, and a handful of spices (fenugreek, turmeric, mustard seeds, andasafetida) add complexity and warmth; I’ve never had it with grilled cheese, but I admit that is currently all I can think about. The curry mustard is deeply golden with theideal textural blendof mostly smooth with some pops of whole seeds. Cumin, paprika, ginger, and cinnamon provide an earthy quality while the light brown sugar makes it just sweet enough.

You can use Brooklyn Delhi’s curry ketchup and mustard anywhere you would the non-curried versions to amp up flavor. Because I avoid corn syrup (long story), Brooklyn Delhi’s ketchup is the only kind in my house; I love it onburgersand french fries, in a glaze onmeatloaforbarbecue, as a coating forsaucy pulled pork, in quickstir-fry sauces. The mustard is perfect onhot dogsandsausagesand as a sidecar forsoft pretzelsor whisked intosalad dressingsor bright, tangyglazes. I have never loved a honey mustard dipping sauce like I do a curry honey mustard dipping sauce, and I’m not sure I’ll ever go back. If you’re feeling really wild, you can even combine the two (plus a spoonful of your favorite mayo) to make a deeply spiced, undeniably delicious comeback sauce, the kind of “homemade” condiment that your friends will clamor over at a barbecue. If you want to call it your secret recipe I won’t tell—just don’t let anyone peek into your fridge.
