Cheddar Dogs with Cider-Braised Leeks and Apples

Cheddar Dogs with Cider-Braised Leeks and Apples Kenji Toma

Leeks and apples simmered in cider add a hint of sweetness—a nice contrast to the sharp melted cheddar. If you can find oblong pretzel rolls at your market, they'll make an ideal accompaniment to these English-style hot dogs.

Ingredients

Makes 6

2 tablespoons (1/4 stick) butter
2 cups (generous) thinly sliced leeks (white and pale green parts only)
1 apple, peeled, cored, diced
1/2 teaspoon caraway seeds
Pinch of ground allspice
Coarse kosher salt
1 1/2 cups hard apple cider or 1 1/4 cups apple cider and 1/4 cup bourbon
6 grilled hot dog buns or brioche-style oblong rolls
Dijon mustard
6 grilled all-beef hot dogs
2 ounces sharp cheddar cheese, coarsely grated (1/2 cup packed)
  1. Step 1

    Melt butter in large skillet over medium heat. Add leeks and apple. Cover; cook until tender, stirring occasionally, about 8 minutes. Mix in caraway and allspice; season with coarse salt and pepper. Add hard cider; bring to boil. Reduce heat to medium-low. Simmer, uncovered, until most of liquid is cooked away, about 16 minutes.

    Step 2

    Arrange buns or rolls on plates. Spread each with mustard, then top with grilled hot dogs. Sprinkle dogs with cheese and top with leek mixture.

  • This wowed us. Much better than expected. The leeks and apples in combination with the hot dog, cheese, and mustard was fantastic. Took other reviewers' advice and doubled the caraway seed.

  • There's a simplicity to this that wows. For a slight flavor kick, try this same recipe with grilled, sweet or hot, Italian sausage. Add a bit of ketchup to the addition of mustard. You won't be disappointed.

  • I decided to follow the recommendations of other reviewers and doubled the caraway seeds and sliced the apples in thin slices instead of dicing them. This dish was amazing! Definitely a hit in our household for a perfect upgrade to standard hot dog fare. The combination of flavors was amazing. Combine this with a nice creamy summer slaw for a side and you have a gourmet summer barbecue feast.

  • Really liked this but felt it needed some tweeking. Added extra caraway and put the apples in later so they still had some life left in them. (The first time I made them, they disappeared into mush). The leeks really disappear flavor-wise so I'll either add onions or substitute next time to get the onion flavour. Satisfying and yummy meal.

  • Made this as part of a hot-dog bar which was part of the choices at a party we held. Everyone loved this. I thought I had allspice in my well-stocked pantry; turned out that was a no-go, so I just grated in a bit of fresh nutmeg. Will definitely make again. Have some leftovers and like the suggestion of serving with pork medallions--conjures up a cool fall evening menu.

  • Enjoyed this very much. Used Strongbow ciderand a little bourbon to braise the leeks and apple. We don't eat hot dogd so I used the cheese and leeks/apples to top medallions of pork tenderloin that I grilled on the BBQ alongside a grilled potato salad. If I could give this 3.5 forks I would. This is also something you could make in the winter months as well.

  • Meant to make this exactly as written, but at the last second realized we didn't have allspice. I added a bit of cloves, cinnamon and nutmeg and then thought it might end up too sweet so added a dash of spicy curry. Sliced the apples thin like the reviewer from Scranton suggested and used Strongbow for our hard cider. Does that count? Anyway flavor was great served with bratwurst! Will make again for sure.
