Grilled Turkey, Bacon, Radicchio, and Blue Cheese Sandwiches

This is the ultimate turkey sandwich.

Ingredients

Makes 2 servings

6 slices applewood-smoked bacon
1/4 cup mayonnaise
1/4 cup crumbled Maytag blue cheese or other mild blue cheese
4 1/2-inch-thick slices country-style white bread (about 5x3 inches)
4 leaves radicchio
6 ounces thinly sliced cooked turkey
4 teaspoons butter, room temperature, divided
  1. Step 1

    Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels. Pour off fat from skillet; reserve skillet.

    Step 2

    Mash mayonnaise and blue cheese in bowl to coarse puree; season with pepper. Place bread on work surface. Divide cheese mixture among bread slices, spreading evenly. Divide bacon, radicchio, and turkey between 2 bread slices. Top with remaining bread, cheese side down. Melt 2 teaspoons butter in reserved skillet over medium heat. Place sandwiches in skillet. Spread 2 teaspoons butter on top pieces of bread. Cover with lid that is slightly smaller than skillet. Cook sandwiches until lightly browned, about 4 minutes per side.

  • This is THE best sandwich I ever had. I prepared it for today's lunch along with tea. My husband and I yummy through the whole lunch without touching drop of tea. We completely forgot our tea. We live in the North city, Edmonton. Vegetables are expensive in winter. A little head of Radicchio cost me $3, but it is an essential. Hint of bitterness from Radicchio makes a good compliment with my sweet maple smoked bacon. I have one more reason looking forward to Turkey leftovers. Thank you for sharing it.

  • Wow- made this last night and it was the best sandwich I have ever eaten. Made as written, except used spinach instead of radicchio since that's what I had in the fridge. Will be making again very soon!

  • Day 4 of thanksgiving leftovers. A package of applewood bacon newly cooked and stashed in the fridge. This sandwich was a surprise- I would never have combined all that but it was soooo good, and so unlike any other turkey combos. I used plain uyogurt instead of mayo (can't stand mayo; don't know why). Next time I'll whirl the spread in a mini prep processor to make it more smooth. Yum.

  • These sandwiches were simply amazing! I didn't change a thing from the ingredients, although we did grill these sandwiches on the grill. Rave reviews from friends at the baby shower where we served these.

  • This is a great alternative to the usual turkey sandwich. I typically buy carving station turkey from the deli counter so this was a great way to change it up. I used Stilton cheese (I had that on hand).

  • I agree - a great use for T'giving leftovers. I made it without the radicchio, and altho it was good, it was missing something. I'll make sure I have radicchio next time.

  • Easy, quick and delicious. Don't skip any of the steps and don't substitute! I tried with once with blue cheese and any time with gorgonzola, blue cheese had more flavor.
