You can stuff this slawlike salad inside your pita, or eat it on its own.

Ingredients

8 Servings

1 small head of green cabbage, thinly sliced
1/4 teaspoon sugar
1 teaspoon kosher salt, plus more
1/4 teaspoon freshly ground black pepper, plus more
1/2 small onion, finely chopped
1/4 cup fresh lemon juice
1/4 cup vegetable oil
1 tablespoon white wine vinegar
1 pint cherry tomatoes, halved
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
1/2 cup pomegranate seeds
  1. Step 1

Toss cabbage, sugar, 1 teaspoon salt, and 1/4 teaspoon pepper in a large bowl, cover, and let sit at room temperature 30 minutes to allow cabbage to soften (or cover and chill up to 2 hours).

    Step 2

Add onion, lemon juice, oil, and vinegar to cabbage and toss to coat. Let sit, uncovered, at room temperature 5 minutes. Add tomatoes, cilantro, mint, and pomegranate seeds and toss to combine. Taste and adjust seasoning with more salt and pepper as needed.

  • Pretty boring. The method for softening the cabbage is clever, but the flavors did not really come together. There are better slaws out there.

  • Replaced pomegranate seeds with feta cheese. Love this salad! Fresh, tangy, and light. Will be making it again!

  • I have made this salad several times with the various modifications : - shredded romaine for cabbage (Better with cabbage) - addeded ricotta salata, tiny cubes (adds a bit of salt) - spiced pumpkin seeds (Eden brand @ Whole Foods) - shredded chicken to make it a main course My family loves it! Softening the cabbage with the salt, pepper, sugar mix can be done well ahead as outline in the instructions, but it's best with the other ingredients added just before serving.

  • Easy and excellent coleslaw. I often omit the pomegranate if it's out of season -- still delicious.

  • I made this colorful salad for my daughters when they arrived home from college and it was so wonderful and light we ate all of it. It is definitely good enough for me to add to my Thanksgiving meal. I will need a bigger head of cabbage next time I make it for my family of 6! Hands down, I give this a 4!!!!!
