Here's a little trick: Thread salmon pieces onto two skewers so they don't flip and spin every time you turn them on the grill.

Ingredients

4 servings

2 tablespoons chopped fresh oregano
2 teaspoons sesame seeds
1 teaspoon ground cumin
1 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1 1/2 pounds skinless salmon fillet (preferably wild), cut into 1" pieces
2 lemons, very thinly sliced into rounds
2 tablespoons olive oil

Special Equipment

16 bamboo skewerssoaked in water 1 hour
  1. Step 1

    Prepare grill for medium heat. Mix oregano, sesame seeds, cumin, salt, and red pepper flakes in a small bowl to combine; set spice mixture aside.

    Step 2

    Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total. Brush with oil and season with reserved spice mixture.

    Step 3

    Grill, turning occasionally, until fish is opaque throughout, 5-8 minutes.

  • This was so good! It's quick and easy but gives good savory flavor. I served with a simple quinoa kale salad and it was the perfect summer meal. I did follow other's advice by zesting the lemon and adding the zest to the seasoning mix, then mixing everything except the lemon slices together before threading onto skewers. This gave the salmon a thorough coating. I put them on a very hot grill then reduced the heat. They were done perfectly in 5 min with lovely grill marks and browning on the outside while medium rare on the inside--perfect! I might reduce the salt a teeny bit next time.

  • Excellent recipe. 1,5lb salmon is not enough for four people (or 3 people!) - 2.5lb at least more like it - especially if salmon cut such that parts not thick enough to dice. Ask for 'thick middle cut". Unless you are very adept at slicing lemon thinly, you also need 4 lemons. This is a lot of salmon - recommend max 4 pieces of salmon per skewer(s). However - great hit with w and m-i-l! Served simply with petits-pois. preceded with Jessica's mushroom soup!

  • Yummm!! The fish really absorbs the lemon flavor, which is definitely the best part! Instead of chili flakes, I used chili powder, less of a burn and extra flavor.

  • Didn’t have sesame seeds so I used the same amount of tahini sauce. Also used fillets. Followed the suggestion of others and threw in some smoked paprika. We eat salmon weekly and I enjoyed the change up. Served it with lemon potatoes with tzatziki and feta with some grilled red peppers. We will make this again.

  • This was delicious and impressive. Thanks to the reviews, I made one change: I mixed the spice mixture with the oil in a large bowl, and then tossed the salmon cubes in it before threading them onto the skewers. Will definitely make again!

  • Insanely great. If you want to introduce your kids to salmon or maybe more complex tastes - use this. The rub is good on top of a salmon filet or steak - but it is unbeatable on the grill.

  • I agree, it's totally annoying when commenters show off about all their nifty variations, but let me just say that this spice mix was incredible on veggies on the grill. And also I just mixed the oil with the spices and then tossed all the veg with it, and it was delicious. But I have no doubt it's a brilliant seasoning for salmon too ;)

  • I generally like my salmon w/o so much seasoning, as I like the salmon flavor to predominate, but this was good. If you use dry oregano, use half as much as fresh. In the future, I'd add more sesame. The lemon was a good surprise, though I don't usually put lemon or lime on my fish.
