Eat standing up, ideally over the sink.
Ingredients
4 servings
Mix giardiniera into mayonnaise in a small bowl. Thickly spread some giardiniera mixture over the bottom half of each roll. Top each with tomato slices; season with salt. Layer on a thick tuft of shredded lettuce; season lettuce with salt, pepper, and a splash of reserved giardiniera brine (about 1 Tbsp. per sandwich). Drizzle with oil.

Back to TopGodsend recipe. I've bought a lot of fermented foods for gut health and giardiniera was a try. Had no idea how to corporate them other than salads. I love Italian sandwiches. Being a Vegan this settles that.

"Eat standing up, ideally over the sink". Amen to that! Juice ran down to my elbows! This is wonderfully messy, delicious, and kinda fun to eat. I love tomato sandwiches, especially when I can get my son's homegrowns.

Surprisingly great! I would use a little less brine next time because it made the mix a little watery, but otherwise terrific!
