Eat standing up, ideally over the sink.

Ingredients

4 servings

1 cup drained jarred giardiniera, finely chopped, plus some brine from the jar
1 cup mayonnaise
4(8英寸)软意大利子卷,分裂
4 large meaty tomatoes, sliced 1/2 inch thick
Kosher salt
1 head of iceberg lettuce, thinly shredded
Freshly ground black pepper
Olive oil (for drizzling)
  1. Mix giardiniera into mayonnaise in a small bowl. Thickly spread some giardiniera mixture over the bottom half of each roll. Top each with tomato slices; season with salt. • Godsend recipe. I've bought a lot of fermented foods for gut health and giardiniera was a try. Had no idea how to corporate them other than salads. I love Italian sandwiches. Being a Vegan this settles that.

  • "Eat standing up, ideally over the sink". Amen to that! Juice ran down to my elbows! This is wonderfully messy, delicious, and kinda fun to eat. I love tomato sandwiches, especially when I can get my son's homegrowns.

  • Surprisingly great! I would use a little less brine next time because it made the mix a little watery, but otherwise terrific!
