Chocolate Coconut Date Bars

Chocolate Coconut Date Bars Peden & Munk

Ingredients

Makes 12

2 cups pitted Medjool dates
3/4 cup raw cacao powder
3/4 cup unsweetened shredded coconut
1/4 cup cacao nibs
2 tablespoons agave syrup
1 teaspoon kosher salt
2 tablespoons water
1/4 cup unsweetened shredded coconut

Equipment:

One 8x8" baking pan, Parchment paper
  1. Coat 8x8" baking pan with nonstick vegetable oil spray; line with parchment, leaving overhang on all sides. Process 2 cups pitted Medjool dates, 3/4 cup raw cacao powder, 3/4 cup unsweetened shredded coconut, 1/4 cup cacao nibs, 2 tablespoons agave syrup, 1 teaspoon kosher salt, and 2 tablespoons water in a food processor until smooth (you may need to stop and scrape down sides a few times). Press mixture firmly into prepared pan. Scatter 1/4 cup unsweetened shredded coconut over top; press to adhere. Cut into bars.

  • Easy, but here are a few tips. A great treat, especially if you're trying to diet. I cut mine into smaller bars. The mixture may form a ball in the food processor. Take it out in a lump and cut into 6 pieces. Place pieces in prepared pan, then cover with a piece of plastic wrap and press the mixture into the bottom. The wrap makes it easy and your hands don't stick. I also used a small glass as a roller to even it out. Also, put it in fridge for 20 minutes before slicing. Ran knife under hot water first to make slicing easier.

  • these were extremely easy to make and even my husband loved them! I found I needed a bit more water than suggested but otherwise I followed the recipe exactly.
