Dinner Salad With Radicchio and Roasted Sweet Potatoes

Salad for dinner? No, we're not kidding. Eggs and roasted sweet potatoes make this salad recipe a full meal, not a sidekick. Feel free to swap in whatever protein (like chickpeas, rotisserie chicken, or roasted salmon) and roasted vegetables (Brussels sprouts, carrots, broccoli) you may have on hand.

Ingredients

4 servings

For the Spicy Cashew Dressing:

1/2 cup salted, roasted cashews
1/4 cup vegetable oil
3 Tbsp. unseasoned rice vinegar
3/4 tsp. crushed red pepper flakes
3/4 tsp. fish sauce
3/4 tsp. honey
1 garlic clove
Kosher salt

For the salad:

4 small sweet potatoes (about 1 1/2 lb. total), scrubbed, halved lengthwise
2 Tbsp. extra-virgin olive oil
4 large eggs
2 heads of radicchio (about 1 lb. total), quartered, cores removed, leaves separated
1 small fennel bulb, quartered lengthwise, thinly sliced lengthwise
2 Tbsp. unseasoned rice vinegar
1/2 cup crushed salted, roasted cashews
1/2 cup cilantro leaves with tender stems
Kosher salt
  1. For the spicy cashew dressing:

    Step 1

    Blend cashews, oil, vinegar, red pepper flakes, fish sauce, honey, garlic, and 1/3 cup warm water in a blender until very creamy, smooth, and pourable. Taste dressing and season with salt.

    Step 2

    Do Ahead:Dressing can be made 3 days ahead. Cover and chill.

  2. For the salad:

    Step 3

    Place a rack in middle of oven; preheat to 425°F. Place sweet potatoes on a rimmed baking sheet, drizzle with oil, and season with kosher salt; turn to coat. Arrange cut side down; roast until tender and cut sides are browned, 20–25 minutes. Let cool.

    Step 4

    Bring a medium pot of water to a boil. Carefully lower eggs into water and cook 8 minutes. Transfer eggs to a bowl of ice water and let cool. Remove eggs from ice water, pat dry, and peel.

    Step 5

    Toss radicchio, fennel, and vinegar in a large bowl; season with sea salt. Drizzle 1/2 cup dressing down sides of bowl. Using your hands, fold salad, working from the bottom out toward the sides of the bowl, until evenly coated in dressing.

    Step 6

    Transfer salad to a platter. Tear sweet potatoes and eggs into 1 1/2" pieces and nestle into salad. Season egg yolks with sea salt. Drizzle more dressing over and top with cashews and cilantro. Serve with remaining dressing alongside.

  • The flavors and textures work together in interesting ways, and the dressing is a find. Next time I will cut everything up into smaller pieces—it may not be as pretty, but it’ll be easier to eat.

  • Made this for a friend and we loved it. Dressing was delicious! I did a combo of romaine and radicchio and used butternut squash cubbed because that's what I had. We topped it with a piece of roasted harissa salmon. You could add any protein if you want. It's a wonderful salad!

  • Fabulous though I did add siracha and lime juice to the dressing. Other than that made as written and it was delish!!

  • This is super interesting yet it somehow works. There are a lot of components but it’s pretty simple to make. I season the potatoes with all purpose seasoning. Only one large sweet potato and one head of radicchio is necessary for 4 servings.

  • Good, but not worth all of the time it took to make. The dressing was amazing, but I was not a fan of the fennel and cilantro in the salad.

  • Also, if you're in Canada, the American "sweet potato" is our yam. FYI. I used one large yam and chopped it up and roasted cubes of it.

  • I loved the flavours in this hearty salad. Most of the family loved it, although one couldn't tolerate the bitterness of the radicchio (it is a very bitter lettuce so if you are hesitant, use half radicchio and half romaine or another milder lettuce). The dressing was so good!

  • Simply fabulous! We had this for dinner this evening. Next time I’d use 1/2 tsp. Red pepper flakes but other than that. It was a colorful, nutritious main course dinner. Thank you!

  • Yes, it sounds odd. But it is amazingly tasty and worth the time. Great for a picnic or potluck. The people I served it to looked at it rather dubiously and then gave it rave reviews. Filling, with interesting textures, and colorful. I will add a generous squeeze of lime or lemon before serving next time.
