Menudo is a Spanish-influenced stew that is popular in Filipino cuisine. Traditional menudo is commonly eaten for lunch or dinner and consists of cubes of pork simmered in tomato sauce, with vegetables added afterwards. This recipe uses ground pork instead, which is a practical variation and an easy way of making menudo.
Ingredients

Step 1
Heat the oil in a skillet over medium-high heat. Add the garlic and onion, and sauté until the onion begins to soften, about 2 minutes.
Step 2
Add the ground pork and cook, stirring regularly, for 5 minutes or until the meat is lightly browned. Stir in the fish sauce.
Step 3
Add the tomato sauce and water. Stir, cover and cook on medium heat for 5 minutes, stirring occasionally.
Step 4

Back to TopTaking note of the reviews, we added some smoked paprika to give it depth, which was really nice. Added more veggies and potatoes, it took longer to cook them than 10 minutes.

Very mild and bland. Easy but with all the veggie prep and various steps, took me almost an hour to make. No need to precook the potato.

For an easy, healthy, filling weeknight meal -- this is great! I'm the only one in our household who loves spice, so I was able to easily add zip to mine, but didn't have to modify the recipe for the rest of the family. The spouse, the four year old, and the two year old all LOVED it. It's not the most exciting thing I've ever made, but they ate it, so that's a WIN. Feeling like #momoftheyear -- at least until someone complains about breakfast tomorrow morning.

This was good, but lacked a little zip, so we added fresh-squeezed lime. That seemed to give it some brightness. It was definitely easy, and I zapped the potato for about 5 minutes in the microwave before adding it, but I'm not going to be in a huge hurry to make it again.
