Almond, Kale, and Banana Smoothie

Ingredients

Serves 2 servings

½ orange, peeled
2 Medjool dates, pitted
¼ cup almonds
1 banana, peeled, cut into 1-inch pieces
2 cups torn kale leaves
¼ cup unsweetened almond milk or coconut water
  1. Blend orange, dates, almonds, and 3 Tbsp. water in a blender on low speed until almonds are finely ground. Increase to speed high and blend until mixture is no longer grainy, about 1 minute. Add banana, kale, almond milk, and ½ cup ice; blend until drink is smooth and thick.

  • This is a very nice and almond-y smoothie if made with almond milk. Coconut water is good but almond milk is better. We use roasted and salted almonds from the bulk bin @ the store (flavor is better than with raw almonds and salt takes the edge off any bitter notes) and also like this with spinach or a mix of spinach and kale. It helps to use a powerful blender to avoid a grainy texture, or maybe blend the first ingredients a bit longer. Our Vitamix does a great job where my mom's 30 year old blender produces a smoothie that is a bit gritty. Add a scoop of plain protein powder and an extra 3-4 oz of almond milk and this one will carry you to lunchtime.

  • Wow! A super tasty combination of ingredients! I used raisins instead of dates and almond milk instead of coconut water. This is definitely a recipe i'll be coming back to again.

  • Tastes great! KRISTINAJZ, I couldn't find anything on the internet about banana and orange inhibiting the absorption of potassium if combined. I'd be interested to know more -- any references you can give?

  • thank you to the previous reviewer with the suggestion to use mango for a thickener instead of banana as I can't eat bananas and most smoothies contain them for the thickener. I will buy the kale on my next shopping trip as I have the rest of the ingredients.

  • I look forward to making this smoothie BUT with a variation of NOT putting banana with the orange because they do not allow potassium to be as bioavailable. I would substitute mango for either one depending on which flavor is more desired. Also, FYI: mango will act as a thickener as the banana does...

  • I've been enjoying something. Freeze the banana and you don't need the ice. I also use ½ cup unsweetened almond milk instead of water--extra calcium!
