Fruit and Seed Bars

Ingredients

Makes 20 bars

1 cup old fashioned oats
1/2 cup raw pumpkin seeds (also known as pepitas)
1/2 cup raw sunflower seeds
2 tablespoons flax seeds
1 cup dried fruit (blueberries, raisins, currants, cranberries and/or cherries)
1/2 cup unsweetened coconut flakes
1/3 cup honey
1/2 cup sunflower butter
  1. Step 1

    Preheat oven to 325 degrees.

    Step 2

    In a food processor, pulse the first 6 ingredients until finely chopped (it's ok if there are few coarsely chopped pieces).

    Step 3

    Add the honey and sunflower and pulse until starting to combine.

    Step 4

    Pour the mixture into a 9 x 9 inch pan, greased then line with parchment and press down into the pan until completely even.

    Step 5

    Bake for 25 minutes.

    Step 6

    Let the bars completely cool before cutting with a serrated knife into bars.

    Step 7

    Serve.

  • My kids are allergic to peanuts and tree nuts, so I was delighted to find this recipe. I'd read the reviews re crumbling so I added an egg after the sunbutter and honey, and they are perfect-more a chewy granola bar than a crunchy one. Other notes: used no-sugar added sunbutter, 6 tablespoons sesame seeds + 2 tablespoons black sesame seeds in lieu of sunflower seeds, all jumbo raisins (varied colors) for fruit, 2 tablespoons chia seeds in lieu of flaxseed, and cut coconut to 1/4 cup (people, coconut is not healthy fat). 25 minutes at 325 F was also perfect (baked in a parchment lined ceramic baking dish).

  • Absolutely delicious. A little crumbly, I found, but regardless, I will no longer be buying pre-made bars. These are so easy and so tasty. I used blueberries and cherries in the mix, and definitely don’t skip the sunflower butter!!

  • I used tahini with cocoa instead of butter and a mix of cranberries, blueberries, raisins and currants and the result is amazing! Definitely gonna try them again and maybe add some nuts ;-)

  • I used almond butter and chia seeds, and didn't have any problems with crumbling. Everyone loved them.

  • I have made this recipe 3 times. Each time the bars didn't hold together at all or did not hold together adequately enough for the kids to eat without crumbling all over. Delicious, but a mess.

  • Healthy and tasty. I used peanut butter. Be sure to not over bake or they will crumble. Trader Joe's orange flavored cranberries and dried apricots are a nice combo.

  • Yummy! And keeps you satisfied, and so healthy! I'm always trying to come up with a snack to keep in my bag for at work or just whenmI'm shopping etc. That's good for you, and hits the cunchy, sweet, salty, just "all the crave buttons". I sprinkled molten finishing salt over the tops, added flavor.
