Hearty Greens With Kumquats

Hearty greens like escarole or kale shine in this fall or winter salad, thanks to tangy kumquats and a vibrant, apple-laced dressing. You can prepare the greens and kumquats in advance, making this an ideal choice for holiday gatherings.

Ingredients

Makes 8 servings

12 cups mixed hearty greens (such as escarole, mustard greens, and kale)
1 cup kumquats, cut into thin rounds, seeded
Kosher salt and freshly ground black pepper
¼ cup chives, chopped into 1" pieces
3 tablespoons roasted salted shelled pumpkin seeds (pepitas)
  1. Step 1

    Store 12 cups mixed hearty greens (such as escarole, mustard greens, and kale; if using mustard greens or kale, fold leaves over and cut off tough center rib and stems) and 1 cup kumquats, cut into thin rounds, seeded, in 2 separate resealable plastic bags. Chill greens and kumquats overnight. Before serving, empty bags with greens and kumquats into a large bowl. Add 1/2 cup Granny Smith Apple Cider Vinaigrette to salad and toss to evenly coat.

    Step 2

    Add more vinaigrette, if desired. Season to taste with kosher salt and freshly ground black pepper. Transfer to a serving bowl and scatter chives and, for a little crunch, 3 tablespoons roasted salted shelled pumpkin seeds (pepitas) over.

  • This salad has become a Thanksgiving staple for my family. I've made it the last several years, and it's a nice juxtaposition of raw, fresh crunch to my butter-happy sides! Kumquats are usually not available in Florida in time for Thanksgiving. This year, I'm subbing out kumquats for cape gooseberries. I always sub out the suggested greens for red leaf lettuce (more appealing to this crowd) and instead of pureeing and straining the apples, I run the apples through a slow masticating juicer. I also think the dressing needs more sweetening than the recipe calls for, so I'll add Tupelo honey to taste.

  • Good, not great, but healthy and pretty. I made exactly as directed, with the apple dressing, which was nice but not worth the effort of pureeing and straining the apple.

  • Kumquats added nice color and a freshness to the salad....served it at Thanksgiving. So it was a nice, refreshing addition. Loved the dressing as well!
