Hibiscus Agua Fresca

Look for dried hibiscus flowers at specialty food shops and Latin markets.

Ingredients

Makes 8

1 fresh ginger, 2 1/2" piece
1 1/3 cups hibiscus flowers
3/4 cup plus 2 tablespoons sugar
  1. Peel and thinly slice fresh ginger. Combine ginger, hibiscus flowers, and 3 cups boiling water in a medium pot. Let steep at room temperature for 30 minutes. Strain into a large pitcher, discarding solids. Add sugar; stir until dissolved. Add 8 cups cold water. Fill glasses with ice; pour agua fresca over and serve. DO AHEAD:Can be made 3 days ahead. Cover and chill.

  • I love the hibiscus - known as sorrel in Jamaica - and this is a really refreshing recipe. Because I like mine on the sour/tart side, I don't sweeten it but provide honey and sugar on the side so guests can make it to taste.

  • This is delicious as written. I have experimented and love the following additions: juice of 2 limes, zest of 1 lime, twice the ginger, a splash of cayenne. I also boil less sugar in 1 cup of water until dissolved and cool, then add 7 cups cold water, not 8 with sugar syrup.
