This refreshing summer salsa gets some heat from serrano chile.
Ingredients
Dice ripe tomatoes and combine with raw corn kernels, diced avocado, chopped cilantro, and fresh lime juice. Add some minced serrano chile for a little heat. Season with salt and more lime juice.

Very nice. I did not have Serranos so I jazzed it up with a 1/4 cup plain yogurt, 1/4 tsp ground cayenne, and 1/2 tsp honey.

I have been making this for a couple of years now and was amazed to see this on Epicurious. How good it is depends on your ingredients. With the freshest, in season corn and tomatoes it is fantastic! I add raw pepitas (pumpkin seeds) to make this a raw vegan main course. I also sometimes add fresh peaches or mangoes. Enjoy
